The Origin of The Bible by F.F. Bruce as well as "The New Testament Documents: Are They Reliable?" by the same author. I've read and handed out the new testament one several times as it is so good at putting to silence the critics of the bible. The other one i've only read parts of as he also gets into the details of languages and other things i wasn't particularly interested at the time.

Bruce Metzger and F.F. Bruce wrote pretty heavily on these topics. Both are top notch scholars. Metzger tends to write for more advanced students and those in the academics. Bruce wrote for that group as well, but his books tend to be very "accessible" to "lay people."
I would personally recommend "The Canon of Scripture" by F. F. Bruce. He talks about the formation of the entire Scripture, though being foremost a New Testament scholar, he majors in the writings of the New Testament and it's development. However, he also talks a lot about the formation of the Old.
Metzger and Bruce are also pretty conservative scholars, though I would say Metzger has some liberal leanings. But he is far from a liberal on the subject. Metzger in spite of his liberal leanings is very sympanthetic to the conservative scholars view point. He regularly blasts a lot of the idiotic things you hear more liberal textual critics get away with on a regular basis.
Either way, either scholar will keep you very busy and give you more than you ever wanted to know on the subject. Both write very clearly on a difficult subject matter.
