converting to mp3 format

I have a question if any computer knowledgable folks can help. I was wondering how you can take a audio CD and convert it to mp3. I want to take CD's that have multiple tracks and convert them to one long message. That way it can fit it onto my iPod much easier. (Kind of what they do with the messages on this site.)I have Roxio Titanium 7 and I think that might work, but I am not sure and was wondering if anyone had any ideas. I have a mac, with iTunes for moving it onto the iPod, I just want to take a 50 minute message broken into 6 tracks into one long mp3.

I found an mac software that can do this but I am assuming you are using windows operating system, I am sure if you do a search for multiple tracks into one, or something like that you will find good software. itunes is great software to intially rip it off the CD into mp3.

How does iTunes do it? I could not find anything on converting into mp3 in the Help. Is it a fairly simple process?
